I love to be a Mom, cook, clean and all the other million things to do as a Mom. One of my favorite food web-sites is Allrecipes.com I go here all the time to try out some new meal. My 3 guys LOVE food so they don’t care as long as it’s eatable lol luckily they are not picky eaters. If you have any recipes you want to add…feel free to post it. I am always looking for something good to eat. And like they always say “The way to a man’s heart is thru his stomach”

  1. My favorite for today is: Slow Cooker Enchiladas (these are awesome)
    Ingredients (serves 6)
    1 pound lean ground beef
    10 (6 inch) corn tortillas, quartered
    1 (1 ounce) package taco seasoning mix
    1 1/4 cups water
    1 (12 ounce) jar chunky salsa
    1 (10.75 ounce) can condensed cream of mushroom soup
    1 (10.75 ounce) can condensed cream of chicken soup
    4 cups shredded Mexican cheese blend

    Directions:Crumble the ground beef into a skillet over medium-high heat. Cook and stir until evenly browned. Add taco seasoning and water; simmer for 15 minutes over low heat.
    In a medium bowl, stir together the salsa, cream of mushroom soup and cream of chicken soup. Mix in most of the cheese, reserving 3/4 cup for later.
    Place a layer of tortillas covering the bottom of a slow cooker. Scoop a layer of the ground beef over that, and then spoon a layer of the cheese mixture. Repeat the layers until you run out of stuff, ending with a layer of tortillas on the top. Top with remaining cheese.
    Cover, and cook on High for 45 minutes to 1 hour.

  2. 1-Dish Chicken Parmesan
    Ingredients (serves 6)

    Batter:
    Mazola Pure® Cooking Spray
    1 1/2 cups all-purpose flour
    2 envelopes Fleischmann’s® RapidRise Yeast
    2 teaspoons sugar
    1/2 teaspoon salt
    3/4 cup very warm water (120 degrees F to 130 degrees F)
    3 tablespoons olive oil

    Toppings:
    12 ounces fully cooked, frozen, breaded chicken (breast or tenders), chopped
    2 cups spaghetti sauce
    1 cup Italian blend shredded cheese
    1 teaspoon Spice Islands® Italian Herb Seasoning
    Directions

    Mix batter ingredients together in a pre-sprayed 8×8-inch baking dish. Let rest 5 to 10 minutes. Top batter evenly with chicken. Pour marinara sauce over chicken, sprinkle with cheese and herbs.Bake by placing in a COLD oven; set temperature to 350 degrees F. Bake for 30 minutes, or until done.

    Recipe Note: If desired, batter may be mixed in a separate bowl. Proceed as directed above.

  3. Berdean’s Cube Steak

    Ingredients (serves 4)

    4 (4 ounce) cube steaks
    salt and pepper to taste
    1/4 cup all-purpose flour
    1/3 cup vegetable oil
    1 teaspoon beef bouillon granules
    Directions

    Season the cube steaks on both sides with salt and pepper. Pour the flour onto a shallow plate and press the steaks into the flour; shake off the excess flour. Heat the oil in a large skillet with lid over medium-high heat. Place the steaks into the hot oil, and cook until golden brown on both sides, about 3 minutes per side.
    Pour water into the skillet to almost cover the steaks. Stir the beef bouillon and salt to taste into the water. Bring to a boil; reduce heat to medium-low, cover, and simmer until very tender, about 2 hours.
    Make gravy from the remains by adding flour, milk, salt, and pepper.”
